I finally broke out of my egg-and-cheese breakfast rut with this simple sweet potato and egg breakfast bake.
I’d gotten in the habit of grabbing a hard-boiled egg and a babybel cheese and tossing it into my lunch bag for a simple breakfast I could eat at my desk at work. I know, it’s terrible to sit at your desk and eat. But when you are not a morning person, just getting out the door on time to catch the bus is hard enough. And I need to be awake before I can even think about eating anything.
So the egg-and-a-cheese breakfast made sense.
What’s funny though, is that even once I started working from my home office full-time, I kept eating it. Day after day. Which gets a bit boring after a while.
But I know I need a protein boost from my breakfast so I don’t have a mid-morning snack attack.
On mornings when I didn’t have a hard boiled egg ready, I’d sometimes stop in at Proper Foods for one of their mashed sweet potato and egg breakfast bakes. Since I no longer head downtown for work, that’s no longer an option for me. But it did inspire me to create my own take on the sweet potato and egg breakfast bake.
To save time and simplify my sweet potato and egg breakfast bake, instead of making mashed sweet potatoes, I used sweet potato spirals. You can make your own with your spiralizer (Amazon affiliate link), or you can buy them pre-made. I got mine from Joyloop through Good Eggs.
Those following a super strict paleo diet wouldn’t use the swiss cheese. But I think it’s a great addition to the dish and always include it. After baking, cut up your egg and mix it in with the cheese and sweet potato spirals.
