Strawberry Rhubarb Jam

Ingredients
  • 3cups rhubarbChopped into 1 centimeter chunks.
  • 3pints strawberriesRemove stems and cut in half lengthwise.
  • 3cups sugar
  • 1 lemonJuice of 1 lemon.
Instructions
  1. Add sugar to rhubarb in a large bowl and let sit for 30 minutes.
  2. Add strawberries and lemon juice, stir to combine.
  3. Pour into a large pot and bring to a boil.
  4. Simmer jam for 3-40 minutes, until thick enough to coat the back of a spoon.
  5. Pour into sterilized jam jars and seal.
  6. Place jam jars in reffrigerator, on top of a hot pad to avoid damaging your shelves.

Keeps for about 4 weeks in your refrigerator.
