  1. Cream shortening, butter, sugars, egg and vanilla in your mixer until well-combined.
  2. Sift together flour, baking soda and salt. Add to mixing bowl and combine on low speed until all flour is incorproated.
  3. Stir in chocolate chips by hand with a wooden sppon until incorporated throughout the dough.
  4. Cover mixing bowl with plastic wrap. Refrigerate dough for 1-2 hours.
  5. When dough is chilled, pre-heat oven to 375 degrees.
  6. Line 2 baking sheets with parchment paper. Using a tablespoon sized cookie scoop, drop cookie dough onto prepared cookie sheets, leaving approximately 2 inches between cookies.
  7. Bake cookies for 8 minutes or until starting to turn a golden brown.
  8. Let cookies cool for 10 minutes on cookie sheet, then transfer to wire rack to finish cooling. Store in an air tight container for up to five days.
