Happy Friday!
Like many of you, I’m gearing up for Memorial Day weekend. We’re doing something a little different this year though—we’re going to BottleRock! Unn addition to finally getting to see Billy Idol, I’m excited about the Culinary Stage. It’s too bad Martha Stewart attended last year because I’d love to see her and Snoop live on stage together. Oh well, you can’t have everything.
I’ve downloaded the app and will do some homework on the food vendors that have marked themselves as gluten-free so I have a good idea of what I can eat before we get there. As much as I’d like to use the event as an excuse to eat ice cream at every meal, I am aware that is not the best idea for my stomach. To say the least! It’s incredibly helpful when festivals make it easy to ID the gluten-free food options. I still think Outside Lands did the best job of this the year we attended.
If your long weekend involves some long hot days, I’d like to introduce you to the Daydrinker Cocktail. Featuring coconut water in a starring role, it’s the perfect refreshing drink for a lazy almost Summer day. I hope you enjoy it!
And now, on to this week’s low FODMAP recipes.
