It seems like everyone has Spring fever this week.
My social media feeds are full of photos from friends enjoying all sorts of family adventures. I even ended up having two friends who don’t know each other traveling to Barcelona at the same time. What are the chances of that?!?!
With Lewis having started a new job a month ago, no Spring break for us.
Ah well. It’s not like it’s felt especially Spring-like around here anyhow. Unless freezing cold and pouring rain is how you envision Spring (which I do not).
At least we can make it feel a little more like Springtime when it comes to baking.
I’ve been working to perfect a gluten-free lemon and spice sugar cookie. It’s a soft, pillowy cookie that can be baked as a drop cookie or rolled out to put your cookie cutter collection to good use. I’m working on getting just the right amount of fresh lemony flavor into them without compromising on the softness. I hope to have something to share with you soon!
