Remember how I was ready for some baking weather? Well, I’ve got it now. We’re having a few days of unseasonal rain which we sorely need. That means I can get to work on perfecting my lemon sugar cookies recipe that the hot weather derailed. And yes, it’s at moments like these I think back in fondness for growing up with central air and heat, where every day could be a baking day…
The first week of every month is always hectic for me. As a self-employed content marketing consultant, I spend the first five working days of each month working on reporting for the prior month then meeting with clients to set the strategy for the month ahead.
It also means I get creative with my procrastination.
This month, it meant I bought new fridge and freezer bins from The Container Store, and used them to organize the bottom shelf of my refrigerator and my pantry items. I’d really wanted to use them in my freezer, but our apartment’s tiny refrigerator didn’t have enough room in the freezer for them.
In any case, it felt great to better organize my extra cooking and baking pantry supplies, and group them together so I don’t end up with a dozen cans of coconut milk again…

Low FODMAP Recipes
- I know breakfast is the most important meal of the day, but it’s hard to get motivated to make something when you are hardly awake. These oatmeal chocolate chip muffins would be an excellent bake-ahead breakfast.

I enjoy Indian food. Recently, I’ve been preparing a lot of Ethiopian meals and have really been enjoying doing that. My daughter has been assisting me also. She loves injera. We haven’t made proper injera bread yet, but we’re doing that this weekend. Last Sunday, we had an Ethiopian feast. Tonight, we’re preparing kombucha. I used to prepare kombucha and water kefir lot, but got out of the practice.
Here in Maryland, we’ve been having snow. They’re calling for more tomorrow. I do adore snow, but you know what? I’m ready for spring weather.
I haven’t tried my hand at any Ethiopian recipes yet. Where are you finding your recipes or inspiration? And I’m with you on being oh so ready for some Spring weather!
Planting has been on hold while we wait for Spring. Saturday, we didn’t get the snow they were calling for so that’s great. I love snow, but I’m ready for spring.

I’m not sure if you ferment, but I love doing that also. I started another round of Kombucha. I was very active with it a few years back, but let my SCOBY’s go unattended for to long. I have made a few tweaks and am looking forward to my new/improved kombucha. I’ve have made water kefir soda several times also, but I prefer kombucha.
We avoid gluten also and I’ve had a lot of fun experimenting with a variety of baked goods using gluten-free flour. 🙂
