Gut-friendly Artichoke Dip
This artichoke dip is low in lactose and omits many of the common gut irritants of the classic artichoke dip while retaining all of its comfort food deliciousness.

  1. Preheat oven to 400 degrees.
  2. Rinse and drain your artichoke hearts. place them on a paper towel and pat dry. Place artichoke hearts into a bowl and drizzle with the garlic-infused olive oil. Place artichoke hearts on a parchment-lined baking sheet. Sprinkle with the salt. Bake for 15 minutes or until the artichoke hearts just start to brown on the edges.
  3. Let artichoke hearts cool to room temperature then roughly chop into small pieces.
  4. Add chopped artichoke hearts and all ingredients except the 1/4 cup reserved parmesan cheese to your food processor. Pulse mixture until all ingredients are combined and texture is smooth but still has some small visible chunks of artichoke.
  5. Place mixture in an ovenproof dish and top with the reserved parmesan cheese. Bake for 20 minutes or until the dip is browned on top and bubbling.
  6. Serve in its baking dish.
